okra, onion, tomato and macaroni bowl
This is my alternate to plain macaroni tomatoes. I like adding the okra and onions. I also add corn and chicken sometimes. It is a quick meal for busy days. You can use canned or frozen vegetables and even canned or pre-cooked chicken. If you use fresh vegetables and chicken, it will take longer to cook.

Ingredients
- 1 can okra and tomatoes
- 1/2 cup chopped onion
- 2 cups chicken broth
- 2 tablespoons extra virgin olive oil
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 can whole kernel corn, drained, optional
- 1 1/2 cups macaroni pasta
- one large cooked chicken breast or 4 boneless skinless thighs, diced into bite size pieces, about 1/2 inch, optional
How To Make okra, onion, tomato and macaroni bowl

Step 1Pour the entire can of okra and tomatoes into a 2-3 quart pot.

Step 2Add remaining ingredients to the pot.

Step 3Turn the heat to medium high and bring to a boil. Once it begins to boil, reduce the heat to medium and let the pot simmer for 10 minutes for al dente pasta. It will need to cook cook a few minutes more if you want softer or even mushy pasta.
