okra, onion, tomato and macaroni bowl

This is my alternate to plain macaroni tomatoes. I like adding the okra and onions. I also add corn and chicken sometimes. It is a quick meal for busy days. You can use canned or frozen vegetables and even canned or pre-cooked chicken. If you use fresh vegetables and chicken, it will take longer to cook.

Ingredients For okra, onion, tomato and macaroni bowl

  • 1 can
    okra and tomatoes
  • 1/2 c
    chopped onion
  • 2 c
    chicken broth
  • 2 Tbsp
    extra virgin olive oil
  • 1 tsp
    black pepper
  • 1 tsp
    garlic powder
  • 1 can
    whole kernel corn, drained, optional
  • 1 1/2 c
    macaroni pasta
  • one large cooked chicken breast or 4 boneless skinless thighs, diced into bite size pieces, about 1/2 inch, optional

How To Make okra, onion, tomato and macaroni bowl

    Pour the entire can of okra and tomatoes into a 2-3 quart pot.

    Add remaining ingredients to the pot.

    Turn the heat to medium high and bring to a boil. Once it begins to boil, reduce the heat to medium and let the pot simmer for 10 minutes for al dente pasta. It will need to cook cook a few minutes more if you want softer or even mushy pasta.
