1Put the water for the pasta on to boil.
In a small saucepan, cook the chicken with the mushrooms over medium heat. If you need to use a little oil, use no more than 1 teaspoon. When the chicken is all white, add the soy, ginger and garlic to the pan. Turn off heat but leave pan on stove.
2Once the water is boiling, add the pasta and cook for 7 minutes, or until al dente.
Drain well, and return to pan.
3Pour chicken and soy over the pasta and toss to coat.
Stir in cilantro and serve.
