my homemade garden fresh vegetable spaghetti sauce

Well guys and gals; my garden is keeping me busy. I had these red and yellow tomatoes, celery, onions sitting on the counter and thought I'd try a spaghetti sauce using all I got out of my garden today. Well it turned out so good. Can't wait until my sweetie gets home tonight for dinner and see what he thinks of it. I'll take the left over sauce and vacume pack it and freese it for use later. (sure made a big pot of sauce) By the way; he came home and gave me a thumbs up. HE LOVED IT!

Ingredients

  • 6 - yellow tomatoes, chopped
  • 4 - red tomatoes, chopped
  • 4 - celery stalks including center leaves, chopped
  • 2 - onions, chopped
  • 3 - green peppers, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 can (15 ounce) tomato sauce
  • 2 tablespoons italian seasoning
  • - salt & pepper to taste
  • 2 - empty sauce can's of water

How To Make my homemade garden fresh vegetable spaghetti sauce

  • Step 1
    Place large pan on medium heat.
  • Step 2
    Add olive oil, heat until hot.
  • Step 3
    Add onion, celery & leaves, green peppers and cook until tender.
  • Step 4
    Add yellow tomatoes and red tomatoes and stir.
  • Step 5
    Add tomato sauce, Italian Seasoning and salt & pepper to taste. Stir and cook for 10 minutes.
  • Step 6
    Add butter and stir until butter melts.
  • Step 7
    Add water and stir completely. Place lid on pan and lower heat and simmer for 2 hours.
  • Step 8
    Serve over your favorite Spaghitti or any pasta. Sprinkle freah grated Parmesan cheese of sauce. (optional)
  • Step 9
    *I vacume packed the left over sauce and placed in the freezer for use later.
