Ingredients
- 1 box fettuccine pasta
- 1/4 cup parsley, divided
- 1 1/2 pounds shrimp, peeled, deveined & tails off
- 1 small zucchini, halved lengthwise & sliced
- 1 small bell pepper (green, red, yellow or orange), seeded & diced
- 3 cloves garlic, minced
- 1/4 cup butter
- - juice & zest from 1 lemon
How To Make *** mom's shrimp scampi with fettucinni ***

Step 1Cook pasta according to directions on package. Drain & cool. Toss with 2 Tbsp parsley.

Step 2In skillet, cook shrimp, zucchini, peppers, garlic in butter, 3 minutes or until shrimp are opaque. Remove. Stir in 3 Tbsp lemon juice, 2 Tbsp lemon zest, remaining parsley, salt & pepper. Spoon over pasta.
