Ingredients For *** mom's shrimp scampi with fettucinni ***

1 boxfettuccine pasta

1/4 cparsley, divided

1 1/2 lbshrimp, peeled, deveined & tails off

1 smzucchini, halved lengthwise & sliced
-
1 smbell pepper (green, red, yellow or orange), seeded & diced
-
3 clovegarlic, minced
-
1/4 cbutter
-
juice & zest from 1 lemon
How To Make *** mom's shrimp scampi with fettucinni ***

1Cook pasta according to directions on package. Drain & cool. Toss with 2 Tbsp parsley.

2In skillet, cook shrimp, zucchini, peppers, garlic in butter, 3 minutes or until shrimp are opaque. Remove. Stir in 3 Tbsp lemon juice, 2 Tbsp lemon zest, remaining parsley, salt & pepper. Spoon over pasta.
