Ingredients

  • 2 - 10 oz. packages breaded eggplant cutlets
  • 1 pound bulk italian sausage, crumbled
  • 1 - 15 oz. packages ricotta cheese
  • 1 - 25 oz. jars pasta sauce, your choice
  • 1 package shredded italian cheese blend

How To Make *** mom's sausage & eggplant parmesan ***

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Cook eggplant according to directions on package.
  • Step 3
    In skillet, cook sausage, about 10 minutes. Transfer to large bowl. Stir in cheese, mix well.
  • Step 4
    In a greased 9 x 13" baking dish, spread 1/2 C pasta sauce on bottom. Top with 1/2 of the eggplant, spread with sausage mixture. Spreasd 1 C sauce, sprinkle with cheese blend. Top with remaining eggplant, sauce & cheese. Bake 25 - 30 minutes.
