Ingredients
- 2 - 10 oz. packages breaded eggplant cutlets
- 1 pound bulk italian sausage, crumbled
- 1 - 15 oz. packages ricotta cheese
- 1 - 25 oz. jars pasta sauce, your choice
- 1 package shredded italian cheese blend
How To Make *** mom's sausage & eggplant parmesan ***

Step 1Preheat oven to 375 degrees F.

Step 2Cook eggplant according to directions on package.

Step 3In skillet, cook sausage, about 10 minutes. Transfer to large bowl. Stir in cheese, mix well.

Step 4In a greased 9 x 13" baking dish, spread 1/2 C pasta sauce on bottom. Top with 1/2 of the eggplant, spread with sausage mixture. Spreasd 1 C sauce, sprinkle with cheese blend. Top with remaining eggplant, sauce & cheese. Bake 25 - 30 minutes.
