This is my "go-to" recipe for guests. It's easy to prepare ahead of time and folks always enjoy it!

Ingredients

  • 1 1/2 pounds reduced fat ground beef
  • 1 clove garlic
  • 1 can 14.5 oz.diced tomatoes
  • 2 cans 6 oz. tomato paste
  • 1 tablespoon oregano
  • 2 tablespoons basil
  • 1/2 teaspoon salt (i prefer sea salt)
  • 1 large carton low-fat cottage cheese
  • 2 - eggs
  • 1/2 cup parmesan cheese
  • 2 tablespoons parlsey flakes
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 pound shredded low-fat mozarella cheese
  • 6 - lasagna noodles

How To Make mmmm good lasagna

  • Step 1
    Brown beef and garlic; drain. Add tomatoes, tomato paste, oregano, basil, and salt. Simmer for at least 30 minutes.
  • Step 2
    Bring a large pot of water to a boil.
  • Step 3
    While water is coming up to boil, in medium bowl mix cottage cheese, beaten eggs, Parmesan cheese, parley, salt and pepper. Put in frig to chill.
  • Step 4
    Boil lasagna noodles per directions on box. When done, place each on a paper towel to cool and absorb moisture.
  • Step 5
    Preheat oven to 350 degrees. Spray a 13 X 9 baking dish (I like glass) with veggie or olive oil spray. Place three noodles in bottom. Spoon 1/2 of meat mixture even as a layer. Now spread 1/2 of cottage cheese mixture as a layer, and then sprinkle 1/2 of Mozza Cheese on top as a layer. Three more noodles on top, rest of meat mixture spooned on as a layer. Now sprinkle rest of Mozza cheese as a layer. And finally place remaining cottage cheese mix in three big dollops down the middle and begin to spread to edges. It and the Mozza will begin to stick together and mix. That's good! Just keep working it until you have a nice upper layer.
  • Step 6
    Bake in 350 degree oven for 30 minutes. Turn oven off and cover dish with foil. Allow to remain in oven for 20-30 minutes. Don't forget to turn oven OFF.
  • Step 7
    I like to serve my Lasagna with a salad and Garlic Bread. After resting in off oven for 20-30 minutes, remove from oven and rest on top of stove. Preheat oven to bake garlic bread and do so. Have salad ready to go.
  • Step 8
    Once the bread is done the Lasagna should have set up nicely to be cut and served. ENJOY!!!
