Ingredients
- 1 pound shrimp, peeled and deveined
- 1/2 pound bay scallops
- 1 pound mussels
- 1 stick butter
- 1 tablespoon olive oil
- 1 cup mini penne pasta
- 1 tablespoon capers
- 2 tablespoons lemon juice, fresh
- 2 cups cooked mini penne pasta
- - parmesan cheese & parsley for topping
How To Make mini penne pasta w/shrimp, bay scallops & mussels

Step 1boil pasta ( al dente,firm bite)set aside

Step 2In a large skillet melt butter with olive oil, add capers and lemon juice

Step 3add mussels,cover 5 mins.

Step 4meanwhile...in another pan drizzle a bit of olive oil and slightly brown bay scallops and shrimp ( 5 mins)

Step 5toss pasta, shrimp, bay scallops & mussels altogether, add the parsley & parmesan cheese before serving....delightful
