Ingredients

  • 8 ounces spaghetti
  • 3 tablespoons butter
  • 2/3 cup ricotta cheese
  • 1 cup Pecorino Romano cheese, shredded
  • salt
  • 1 tablespoon black pepper
  • 1/4 cup grated Parmesan cheese

How To Make mini cacio e pepe

  • Step 1
    Cook the spaghetti in salted boiling water. Drain and reserve 1 cup of pasta water.
  • Step 2
    Place the spaghetti back in the pan and add the butter, ricotta, Pecorino, and pepper.
  • Step 3
    Stir until the cheese is all melted, adding pasta water as needed to make the spaghetti nice and creamy.
  • Step 4
    Preheat the oven to 350 degrees F. Spray a mini muffin tin with the cooking spray.
  • Step 5
    With a fork, twirl the spaghetti around the fork and stick it into each muffin tin.
  • Step 6
    Sprinkle with the grated Parmesan and bake 15 to 20 minutes.
