Ingredients
- 8 ounces spaghetti
- 3 tablespoons butter
- 2/3 cup ricotta cheese
- 1 cup Pecorino Romano cheese, shredded
- salt
- 1 tablespoon black pepper
- 1/4 cup grated Parmesan cheese
How To Make mini cacio e pepe

Step 1Cook the spaghetti in salted boiling water. Drain and reserve 1 cup of pasta water.

Step 2Place the spaghetti back in the pan and add the butter, ricotta, Pecorino, and pepper.

Step 3Stir until the cheese is all melted, adding pasta water as needed to make the spaghetti nice and creamy.

Step 4Preheat the oven to 350 degrees F. Spray a mini muffin tin with the cooking spray.

Step 5With a fork, twirl the spaghetti around the fork and stick it into each muffin tin.

Step 6Sprinkle with the grated Parmesan and bake 15 to 20 minutes.
