Ingredients

  • 1 lb
    extra lean ground beef
  • 1/2 c
    onion, chopped
  • 1/2 c
    green bell pepper, chopped
  • 1/4 c
    water
  • 8 oz
    tomato sauce
  • 6 oz
    tomato paste
  • 1/2 pkg
    taco seasoning mix
  • 1/2 c
    black olives, chopped
  • 6
    non-fat flour tortillas
  • 1 c
    non-fat mozzarella cheese, shredded
  • 1 c
    non-fat cheddar cheese, shredded

How to Make Mexican Lasagna

Step-by-Step

  1. Cook ground beef with onions and green peppers.
  2. Then combine the drained beef with the tomato paste, sauce, water and seasoning and simmer until thick and bubbly.
  3. In a 13 x 8 pan make a single layer with 3 of the tortillas.
  4. Pour half of the sauce over it evenly, and sprinkle half the olives and half of the cheeses.
  5. Repeat.
  6. Bake for 25 to 35 minutes.
