Even though this has quite a few ingredients, it's easy to put together. I found the basic recipe years ago and added more things I like.

Ingredients
- 2 pounds hamburger meat
- 1 large onion, diced
- 2 packages taco seasoning
- 2 cans pinto beans
- 1 small can black olives, sliced & drained
- 2 packages shredded mexican cheese blend
- 2-3 dashes red pepper flakes
- 1/2 teaspoon cumin
- 1 large tub sour cream
- 1 large can enchillada sauce
- - corn tortillas
- - sliced jalapenos
- - tomatoes, chopped
How To Make mexican lasagna

Step 1Brown hamburger, with red pepper flakes, cumin and onions till tender.

Step 2Drain meat & add taco seasoning and pinto beans. Mix well & set aside.

Step 3Start with meat mixture, making a thin layer in bottom of 9x13 pan.

Step 4Sprinkle with black olives and shredded cheese.

Step 5Spoon enchillada sauce over each layer evenly then top with tortillas. You may have to tear a few to fit in the corners.

Step 6Repeat layers until ingredients are used up. Last layer should be shredded cheese.

Step 7Bake till top is browned. Let stand for about 10 minutes before serviing.

Step 8Best served with a dollup of sour cream with jalapenos & chopped tomatoes on top.
