  • 8 manicotti shells
  • 1 egg, beaten
  • 1 1/2 cups chicken, cooked (rotisserie works well)
  • 1/2 cup chopped broccoli (frozen or fresh, if using frozen, thaw)
  • 1/4 cup fine dry bread crumbs
  • 3 scallions, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups Colby or Monterey Jack cheese, shredded
  • 1 can cream of chicken soup (10.75 oz)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon black pepper or to taste
  • 1/2 cup milk

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Cook manicotti according to package directions; drain.
  • Step 3
    For the filling, combine egg, chicken, broccoli, bread crumbs, scallions, salt, and pepper. Add 1/2 cup of the cheese; toss to mix.

    Spoon filling into the manicotti shells. Arrange the manicotti in a 2-quart rectangular baking dish.
