Ingredients
- 8 manicotti shells
- 1 egg, beaten
- 1 1/2 cups chicken, cooked (rotisserie works well)
- 1/2 cup chopped broccoli (frozen or fresh, if using frozen, thaw)
- 1/4 cup fine dry bread crumbs
- 3 scallions, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups Colby or Monterey Jack cheese, shredded
- 1 can cream of chicken soup (10.75 oz)
- 1/2 teaspoon onion powder
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon black pepper or to taste
- 1/2 cup milk

Step 1Preheat oven to 350 degrees F.

Step 2Cook manicotti according to package directions; drain.

Step 3For the filling, combine egg, chicken, broccoli, bread crumbs, scallions, salt, and pepper. Add 1/2 cup of the cheese; toss to mix.

Step 4Spoon filling into the manicotti shells. Arrange the manicotti in a 2-quart rectangular baking dish.

Step 5In a bowl, stir together the soup, onion powder, poultry seasoning, black pepper, and milk; pour over the manicotti.

Step 6Cover with foil. Bake for 30 - 35 minutes or until heated through.
