Sometimes when I have left-over mac'n cheese...I just add left-over meatballs or store bought ones and chop them up and pour my own canned sauce over top. Both ways are super easy on a busy after-work night!

Ingredients

  • 1/2 each lb
    ground beef,veal, & pork or pkg. meatloaf mix
  • 1/2 c
    italian bread crumbs
  • 3/4 c
    grated parmesan cheese
  • 1 bunch
    fresh chopped parsley or ( 2 t. dry )
  • 5 clove
    chopped garlic
  • 1 can(s)
    chicken stock
  • 1 jar(s)
    spaghetti sauce
  • 1/2 c
    red wine (optional)
  • ·
    salt and pepper to taste
  • ·
    olive oil /enough to coat bottom of pan
  • 1 box
    pasta of choice

How to Make Meatball Macaroni

Step-by-Step

  1. Saute meat in olive oil, add garlic,cook about 2 min. Stir in bread crumbs,parsley,salt & pepper. Cook another 2-3 min. Add cheese,heat til melted.
  2. Add stock, wine (opt.) & spaghetti sauce. Simmer 30 min. Add pasta. You can use elbow, penne or whatever your choice. Serve with more grated cheese on top. So yummy and makes enough for a crowd.
