meatball macaroni

Sometimes when I have left-over mac'n cheese...I just add left-over meatballs or store bought ones and chop them up and pour my own canned sauce over top. Both ways are super easy on a busy after-work night!

Ingredients
- 1/2 each pound ground beef,veal, & pork or pkg. meatloaf mix
- 1/2 cup italian bread crumbs
- 3/4 cup grated parmesan cheese
- 1 bunch fresh chopped parsley or ( 2 t. dry )
- 5 cloves chopped garlic
- 1 can chicken stock
- 1 jar spaghetti sauce
- 1/2 cup red wine (optional)
- - salt and pepper to taste
- - olive oil /enough to coat bottom of pan
- 1 box pasta of choice
How To Make meatball macaroni

Step 1Saute meat in olive oil, add garlic,cook about 2 min. Stir in bread crumbs,parsley,salt & pepper. Cook another 2-3 min. Add cheese,heat til melted.

Step 2Add stock, wine (opt.) & spaghetti sauce. Simmer 30 min. Add pasta. You can use elbow, penne or whatever your choice. Serve with more grated cheese on top. So yummy and makes enough for a crowd.
