manicotti shells
2 Tbsp
olive oil
2 c
ricotta cheese
2 c
mozzarella cheese, shredded
3/4 c
mozzarella cheese, shredded
1/2 c
parmesan cheese, grated
1/4 c
parmesan cheese, grated
1/4 c
spinach, thawed and drained
egg, beaten (optional)
2 Tbsp
basil, freshly torn in pieces
1 Tbsp
parsley, finely chopped sprigs
26 oz
marinara sauce

How to Make Manicotti Florentine


  • 1Preheat oven to 350.
  • 2Cook noodles according to directions; drain, transfer to pan of cold water - Add 2 tablespoons olive oil to prevent sticking.
  • 3Combine remaining ingredients (except marinara sauce and reserved cheese) in medium bowl and mix well.
  • 4Pour 2 cups marinara sauce in a 9x13 pan (or glass).
  • 5Pat excess water from shells, fill with cheese, spinach mixture and lay in pan.
  • 6Pour remaining sauce over shells and sprinkle with reserved cheese; bake 15-20 minutes uncovered.
  • 7NOTE: You can omit egg and salt but increase Ricotta cheese to 2 cups and Mozzarella cheese to 2 cups in bowl - needed to fill 12 shells.
