Ingredients
- FOR THE MACARONI LOAF
- 1 cup macaroni
- 1 cup bread pieces
- 1 cup light cream
- 1/2 cup melted butter
- 3 large eggs
- salt, to taste
- 3/4 cup cheddar cheese, grated
- 2 ounces pimento
- 1 tablespoon parsley, chopped
- FOR THE MUSHROOM SAUCE
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons olive oil
- 10 ounces mushrooms, sliced
- 2 garlic cloves, minced
- 1/4 cup white wine
- 1/2 cup chicken broth
- 1 cup cream
- 1/2 cup parmesan cheese, finely grated
- 2 teaspoons fresh thyme, chopped
How To Make macaroni loaf with mushroom sauce

Step 1Prepare the loaf: Preheat oven to 350F,. Grease a 5x9 inch loaf pan - set aside

Step 2Cook macaroni according to package directions. Drain. Gently combine all ingredients and pour into the prepared pan.

Step 3Place loaf pan in pan of water inside oven. Bake 1 hour or until a knife inserted in the center of the loaf come out clean.

Step 4Meanwhile, For the Sauce: Heat oil and butter in a large skillet. Add mushrooms and cook until golden brown. This will take about 5 minutes. During the last minute, add the garlic and a pinch of salt.

Step 5Add the wine and stir to deglaze the pan, stirring up all the brown bits from the bottom of the pan. Cook until most of the wine evaporates.

Step 6Add broth, cream and parmesan cheese. Stir and bring to a simmer. Simmer for 3-4 minutes until slightly thickened. Stir in the thyme. Taste and adjust seasoning if needed.
