My attempt to make macaroni and cheese a healthier, more well-balanced meal. Turned out to be a hit!

Ingredients

  • 2 cups uncooked elbow macaroni, cooked according to box
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon worcestershire sauce
  • 2 cups milk
  • 2 cups shredded cheese, use one kind or a mixture
  • 1 bunch broccoli, steamed and cut into bite size pieces
  • 1 cup tomatoes, cut into bite size pieces
  • 1 1/2 cups chicken, cooked and shredded
  • - bread crumbs to top

How To Make macaroni and cheese with chicken and veggies

  • Step 1
    Preheat oven to 350
  • Step 2
    Melt butter in pan over low heat. Stir in flour, salt, pepper, mustard, and Worcestershire sauce. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Stir in milk. Heat to boiling, stirring constantly. Boil and stir minute. Stir in cheese until melted.
  • Step 3
    Add macaroni, chicken, broccoli, and tomatoes.
  • Step 4
    Pour into 2 quart casserole dish. Top with breadcrumbs. Bake uncovered 20 to 25 minutes or until bubbly.
