I love this recipe and serve it with garlic toast and a veggie or a mixed green salad. As soon as your shells are cooked put them in cold water to stop cooking and easier stuffing.

Ingredients
- 1 box jumbo shells..cooked and rinsed in cold water
- 1/2 - onion..chopped small
- 1 clove garlic..minced
- 2 tablespoons butter
- 2 cups ricotta cheese
- 1 package (10oz) frozen spinach..thaw and squeeze dry
- 2 large eggs..slightly beaten
- 1/2 teaspoon salt
- 3/4 cup mozzerella cheese..shredded(need extra for top)
- 1/4 cup parmesan cheese(need extra for top)
- 1 jar spaghetti sauce

Step 1Saute' onion and garlic in butter. combine with cheeses,spinach,eggs,& salt.

Step 2Stuff each shell with mixture. Pour a small amount of spaghetti sauce on the bottom of a 9"x13" baking dish

Step 3place shells in pan. Cover with remaining spaghetti sauce. Top with more mozzarella and parmesan cheese.

Step 4Cover with foil and bake 350 for 45 minutes.
