lobster stuffed shells with garlic mushroom sauce

Ingredients
- SHELLS AND FILLING
- 20 jumbo shells
- 2 cups cooked lobster meat or use langoustines
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 1 large egg
- 3 tablespoons fresh basil chopped
- 1 lemon, zested
- salt and pepper to taste
- MUSHROOMS
- 1 pound mushrooms, sliced
- 2 tablespoons olive oil
- salt
- GARLIC SAUCE
- 4 tablespoons butter
- 4 cloves garlic, minced
- 2 tablespoons flour
- 2 cups heavy cream
- 1 tablespoon lemon juice
- salt and pepper, to taste
- 1 pinch nutmeg
- chopped fresh basil for garnish
How To Make lobster stuffed shells with garlic mushroom sauce

Step 1Cook the shells in boiling salted water for about 10 minutes. They will not be done. Drain and let cool.

Step 2Mix the cooked lobster meat, ricotta cheese, mozzarella cheese, parmesan cheese, egg, basil, and lemon zest. Add salt and pepper.

Step 3Fill each shell with the filling and set aside.

Step 4Add the olive oil to a sauté pan and add the mushrooms, and season with salt and pepper. Saute the mushrooms until they give off their moisture and set aside.

Step 5Melt the butter in a saucepan and add the garlic, and cook for 1 minute.

Step 6Whisk in the flour and cook 1 minute.

Step 7Add the heavy cream, and once thickened, add the Parmesan cheese.

Step 8Let that melt, then add the lemon juice, nutmeg, salt, and pepper.

Step 9Preheat the oven to 375 degrees F. Put a little sauce in the bottom of a square baking dish. Add the filled shells.

Step 10Stir the mushrooms into the sauce and pour over the shells.

Step 11Cover with foil and bake for 20 minutes. Remove foil and bake 5 more minutes.

Step 12Top with fresh basil for garnish.
