These shells are stuffed full of gooey cheese and decadent lobster meat for a sinful dish.

Ingredients

  • SHELLS AND FILLING
  • 20 jumbo shells
  • 2 cups cooked lobster meat or use langoustines
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 large egg
  • 3 tablespoons fresh basil chopped
  • 1 lemon, zested
  • salt and pepper to taste
  • MUSHROOMS
  • 1 pound mushrooms, sliced
  • 2 tablespoons olive oil
  • salt
  • GARLIC SAUCE
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups heavy cream
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • 1 pinch nutmeg
  • chopped fresh basil for garnish

How To Make lobster stuffed shells with garlic mushroom sauce

  • Step 1
    Cook the shells in boiling salted water for about 10 minutes. They will not be done. Drain and let cool.
  • Step 2
    Mix the cooked lobster meat, ricotta cheese, mozzarella cheese, parmesan cheese, egg, basil, and lemon zest. Add salt and pepper.
  • Step 3
    Fill each shell with the filling and set aside.
  • Step 4
    Add the olive oil to a sauté pan and add the mushrooms, and season with salt and pepper. Saute the mushrooms until they give off their moisture and set aside.
  • Step 5
    Melt the butter in a saucepan and add the garlic, and cook for 1 minute.
  • Step 6
    Whisk in the flour and cook 1 minute.
  • Step 7
    Add the heavy cream, and once thickened, add the Parmesan cheese.
  • Step 8
    Let that melt, then add the lemon juice, nutmeg, salt, and pepper.
  • Step 9
    Preheat the oven to 375 degrees F. Put a little sauce in the bottom of a square baking dish. Add the filled shells.
  • Step 10
    Stir the mushrooms into the sauce and pour over the shells.
  • Step 11
    Cover with foil and bake for 20 minutes. Remove foil and bake 5 more minutes.
  • Step 12
    Top with fresh basil for garnish.
