Ingredients
- 8 ounces linguine
- 1/2 cup sun-dried tomatoes, not in oil
- 1/2 cup fresh basil
- 2 tablespoons Parmesan cheese
- 1 clove garlic, minced
- 2 tablespoons olive oil
- salt
How To Make linguine with sun-dried tomato pesto

Step 1Add 1/2 cup of hot water to a bowl, and add the sun-dried tomatoes. Let sit for about 5 minutes to soften them.

Step 2Place pasta in a pot of boiling salted water and cook 20 minutes.

Step 3Meanwhile, make the pesto. Drain the sundried tomatoes, reserving the water.

Step 4Place the tomatoes, basil, Parmesan, olive oil, and garlic in a food processor.

Step 5Drizzle the reserved water to achieve the desired consistency.

Step 6Drain the pasta and add it back to the pan. Mix in the pesto over low heat to heat through.

Step 7Garnish with extra Parmesan cheese.
