Ingredients

  • 8 ounces linguine
  • 1/2 cup sun-dried tomatoes, not in oil
  • 1/2 cup fresh basil
  • 2 tablespoons Parmesan cheese
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • salt

How To Make linguine with sun-dried tomato pesto

  • Step 1
    Add 1/2 cup of hot water to a bowl, and add the sun-dried tomatoes. Let sit for about 5 minutes to soften them.
  • Step 2
    Place pasta in a pot of boiling salted water and cook 20 minutes.
  • Step 3
    Meanwhile, make the pesto. Drain the sundried tomatoes, reserving the water.
  • Step 4
    Place the tomatoes, basil, Parmesan, olive oil, and garlic in a food processor.
  • Step 5
    Drizzle the reserved water to achieve the desired consistency.
  • Step 6
    Drain the pasta and add it back to the pan. Mix in the pesto over low heat to heat through.
  • Step 7
    Garnish with extra Parmesan cheese.
