Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, fresh
  • 1 medium red pepper, julienned
  • 1 medium onion, julienned
  • 8 ounces sliced mushrooms, fresh
  • 1 medium zucchini, sliced
  • 1 medium yellow zucchini, sliced
  • 1 cup broccoli florets, chopped
  • 1 can (12-15oz) non-fat evaporated milk
  • 1/2 cup shredded parmesan cheese
  • 8 ounces linguine, cooked
  • - fresh pepper

How To Make linguine primavera

  • Step 1
    Cook linguine according to directions on the package. While linguine is cooking, in a large skillet, heat oil and lemon juice. Add peppers, onion and mushroom; cook until tender crisp.
  • Step 2
    Add milk and 1/4 cup cheese, stirring frequently.
  • Step 3
    Drain linquine, and add to the vegetables; toss to coat. Top with remaining cheese and serve with fresh pepper.
