Cooking for two instead of a family of four doesn't mean giving up the dishes you love nor throw out tons of uneaten leftovers. It just means creative adjustments.

Ingredients

  • 1 1/2 cups spaghetti sauce
  • 1/2 pound lean ground beef or turkey
  • 2 sheets barilla oven-ready lasagne noodles
  • 8 ounces cottage cheese (or ricotta, if preferred)
  • 1 cup mozzarella cheese, shredded
  • - *optional* diced onion, diced tomato, sliced mushrooms, sliced mozzarella

How To Make lil' pot lasagna

  • Step 1
Preheat oven to 375 degrees F. Brown ground beef in enough water to cover bottom of pan; drain well. Season as desired. Add in sauce and any optional items you'd like such as diced onion, diced tomatoes or mushrooms. Stir well.
  • Step 2
In each of two oven-safe bowls or ramekins, place 1/4 of meat sauce (if desired, place a slice of mozzarella cheese but not necessary.)
  • Step 3
Break one sheet of oven-ready lasagne in half and place on meat sauce.
  • Step 4
Divide the cottage cheese between the two bowls; spread to the edges. Break last lasagne sheet in half, place on top of cottage cheese in each dish.
  • Step 5
Spread remainder of meat sauce in each bowl. Divide the shredded mozzarella between each dish. Cover with foil and place on a baking sheet in oven.
  • Step 6
Bake for 25 minutes. Remove foil and bake for another 5 minutes or until cheese is melted and golden. **Allow to set for 15 minutes before serving**
