Lil' Pot Lasagna

Teresa Jacobson

Cooking for two instead of a family of four doesn't mean giving up the dishes you love nor throw out tons of uneaten leftovers. It just means creative adjustments.

1 1/2 c
spaghetti sauce
1/2 lb
lean ground beef or turkey
2 sheet(s)
barilla oven-ready lasagne noodles
8 oz
cottage cheese (or ricotta, if preferred)
1 c
mozzarella cheese, shredded
*optional* diced onion, diced tomato, sliced mushrooms, sliced mozzarella

How to Make Lil' Pot Lasagna

  • 1Preheat oven to 375 degrees F.
Brown ground beef in enough water to cover bottom of pan; drain well. Season as desired. Add in sauce and any optional items you'd like such as diced onion, diced tomatoes or mushrooms. Stir well.
  • 2In each of two oven-safe bowls or ramekins, place 1/4 of meat sauce (if desired, place a slice of mozzarella cheese but not necessary.)
  • 3Break one sheet of oven-ready lasagne in half and place on meat sauce.
  • 4Divide the cottage cheese between the two bowls; spread to the edges.
Break last lasagne sheet in half, place on top of cottage cheese in each dish.
  • 5Spread remainder of meat sauce in each bowl.
Divide the shredded mozzarella between each dish. Cover with foil and place on a baking sheet in oven.
  • 6Bake for 25 minutes. Remove foil and bake for another 5 minutes or until cheese is melted and golden.
**Allow to set for 15 minutes before serving**
