lighter pasta, sausage & tomatoes in cream sauce

I had found a recipe for a pasta and sausage dish but it was loaded w/ tons of fat. So I made up my own version. And even though it's still considered a little on the high side for fat, it's still lower than the original and tastes fantastic!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound italian style chicken sausages
  • 1/3 cup diced onion
  • 1 tablespoon minced garlic
  • 1 - 14-1/2 oz can italian style plum tomatoes, drained, coarsely chopped
  • 1-1/4 cup light cream
  • 1 dash salt & pepper to taste
  • 1 box rotini or rigatone pasta
  • 2 tablespoons chopped fresh parsley
  • 1/3 cup fresh grated parmesan cheese

How To Make lighter pasta, sausage & tomatoes in cream sauce

  • Step 1
    Cook pasta as directed, drain and toss w/ 1 tbsp olive oil. Set aside in lg pot. Heat remaining oil in lg pot. Remove sausage casings and add sausages to pot.
  • Step 2
    Cook, over med-high heat, crumbling the sausage as it cooks. Cook until no longer pink. Add onion and garlic to sausages. Cook, stirring, for 5 mins.
  • Step 3
    Add tomatoes, light cream, salt and pepper. Bring to a simmer. Simmer, stirring occasionally until it starts to thicken. Pour in parmesan cheese. Stir in pasta and heat through. Sprinkle w/ parsley right before serving.
