leftover pasta
My husband and I love pasta and therefore usually have some in the fridge already made. We also love tomatoes and have had great tomato gardens. We usually start by combining the two whenever we can. The latest recipe I made starting with these two ingredients was a great success. Hope you try it and let me know what your combinations are. - Ruth

Ingredients
- 2 cups cooked macaroni
- 1 can any tomatoes you like (i used diced with basil, garlic and oregano)
- 1 can green giant steam crisp southwestern corn
- 1 cup diced lunch meat (such as spam)
- 1 tablespoon garlic powder with parsley
How To Make leftover pasta
-
Step 1Cook macaroni per directions on box. OR (as I did) use 2 cups of leftover macaroni that already had tomatoes added.
-
Step 2In a microwaveable bowl, (If not already added) mix in 1 can (15 oz) diced tomatoes with or without spices added and use your own favorite.
-
Step 3Add 1 can (11 oz) steam crisp southwestern corn and mix altogether. At this point, you can add the garlic powder or any other spices you want.
-
Step 4Cook in microwave to heat through. (Mine took about 2 minutes.)
