layered tomato casserole

As a child, my son hated this dish because he couldn't stand tomatoes, no matter how I disguised them. These days he is growing them in his garden--go figure! This is a good hearty dish for cold weather--one of my favorites.

Ingredients

  • 1 pound ground chuck
  • 1/2 cup onion, diced
  • 1 can (16 oz.) tomatoes, sliced & drained, reserving liquid
  • 2 - eggs
  • 1 teaspoon salt
  • 1 dash pepper
  • 8 ounces noodles, cooked & drained
  • 8 ounces mozzarella cheese, shredded

How To Make layered tomato casserole

  • Step 1
    In a large skillet over medium heat, brown beef and onion; drain any fat.
  • Step 2
    Combine tomato liquid, eggs, and seasonings. Set aside.
  • Step 3
    In a 1-1/2-qt. casserole, layer half each of noodles, hamburger, tomatoes, cheese and liquid (in that order). Repeat for another layer.
  • Step 4
    Bake uncovered in a 375º oven for 20-25 minutes.
