Took some sauce out of the freezer and roasted some vegetables. Rolled up to make these lasagna rolls. Yummo!

Ingredients

  • 12 - lasagna noodles
  • 8 cups spaghetti sauce
  • - ricotta mix (below)
  • - roasted veggies (below)

How To Make roasted veggie lasagna roll ups

  • Step 1
    ROASTED VEGGIES 1 lg pepper chopped 1 zucchini sliced 1 squash sliced 2c broccoli 8oz sliced mushrooms 1c sliced carrots 4 garlic cloves Drizzel with olive oil s&p and roast veggies in 400 degree oven for 30min.
  • Step 2
    RICOTTA MIX 2c ricotta 1 egg 1/4c parmesan cheese 1/4c mozzerella cheese S&P to taste
  • Step 3
    Cook lasagna noodles according to package directions. Lay out and begin by spreading each pasta with 1/4 cup ricotta mix, top with roasted veggies.
  • Step 4
    Carefully roll each one up and place, seam side down, in baking dish, with sauce on bottom of pan. Top with sauce.
  • Step 5
    Cover and bake in 350 oven for 25 minutes, uncover, top with mozzerella and bake another ten minutes.
