How to Make Roasted Veggie Lasagna Roll Ups
- ROASTED VEGGIES
1 lg pepper chopped
1 zucchini sliced
1 squash sliced
8oz sliced mushrooms
1c sliced carrots
4 garlic cloves
Drizzel with olive oil s&p and roast veggies in 400 degree oven for 30min.
- RICOTTA MIX
1/4c parmesan cheese
1/4c mozzerella cheese
S&P to taste
- Cook lasagna noodles according to package directions. Lay out and begin by spreading each pasta with 1/4 cup ricotta mix, top with roasted veggies.
- Carefully roll each one up and place, seam side down, in baking dish, with sauce on bottom of pan. Top with sauce.
- Cover and bake in 350 oven for 25 minutes, uncover, top with mozzerella and bake another ten minutes.
