Took some sauce out of the freezer and roasted some vegetables. Rolled up to make these lasagna rolls.

Ingredients

lasagna noodles
8 c
spaghetti sauce
ricotta mix (below)
roasted veggies (below)

How to Make Roasted Veggie Lasagna Roll Ups

Step-by-Step

  • 1ROASTED VEGGIES
    1 lg pepper chopped
    1 zucchini sliced
    1 squash sliced
    2c broccoli
    8oz sliced mushrooms
    1c sliced carrots
    4 garlic cloves
    Drizzel with olive oil s&p and roast veggies in 400 degree oven for 30min.
  • 2RICOTTA MIX
    2c ricotta
    1 egg
    1/4c parmesan cheese
    1/4c mozzerella cheese
    S&P to taste
  • 3Cook lasagna noodles according to package directions. Lay out and begin by spreading each pasta with 1/4 cup ricotta mix, top with roasted veggies.
  • 4Carefully roll each one up and place, seam side down, in baking dish, with sauce on bottom of pan. Top with sauce.
  • 5Cover and bake in 350 oven for 25 minutes, uncover, top with mozzerella and bake another ten minutes.
