ALL THE FLAVORS OF ITALY. MAYBE ADD SOME SPINACH TO THE FILLING. USE SOME CRUSHED ROSEMARY AND SOME PINIOLI NUTS AND SOME OREGANO, MAYBE A SPLASH OF RED WINE. YUMMO!!

Ingredients

  • 12 ounces whole wheat lasagna noodles
  • 1 tablespoon canola oil
  • 1 pound ground beef
  • 28 ounces stewed tomatoes
  • 6 ounces tomato paste
  • 1 tablespoon sugar
  • 1 tablespoon basil
  • 1 1/2 teaspoons salt
  • 1/2 - bay leaf , crushed
  • 1 - clove garlic, minced
  • 3 cups small curd cottage cheese
  • 3/4 cup grated parmesan cheese
  • 3 - eggs, beaten
  • 2 tablespoons parsley flakes
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 10 - mozzarella, slices
  • 1 cup mozzarella cheese, shredded

How To Make lasagna

  • Step 1
    Bring a large saucepan of water to a boil. Add the noodles, oil and salt to taste. Cook for 12 minutes or until tender. Drain and rinse with cold water.
  • Step 2
    Brown the ground beef in a skillet, until crumbly; drain. Stir in the undrained tomatoes, tomato paste, sugar, basil, 1 1/2 teaspoon salt, bay leaf and garlic. Simmer for 30 minutes, stirring occasionally.
  • Step 3
    Combine cottage cheese, parmesan cheese, eggs, parsley flakes, 2 teaspoons salt and pepper in a bowl and mix well.
  • Step 4
    Layer the noodles, cottage cheese mixture, mozzarella cheese and ground beef mixture 1/2 at a time in a deep baking dish sprayed with cooking spray. Bake at 350 for 40 minutes. Add grated cheese last 5 minutes of cooking. Let stand for 15 minutes before serving.
