Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg, whole
- 2 large egg yolks
- 1/3 cup water
- 1 teaspoon vegetable oil
How To Make kim's egg noodles

Step 1In a big bowl, stir together the flour and the salt. Make a small hole in the middle and set aside.

Step 2In a small bowl, mix the egg, egg yolks, water, and vegetable oil.

Step 3Pour the egg mixture into the hole you made in the flour. Stir to combine.

Step 4Knead the dough until smooth, about 10 minutes, on a flat and well-floured surface.

Step 5Let the dough rest for 10 minutes.

Step 6Divide the dough into four pieces. Using one piece at a time, roll the dough into a square approximately 1/8 of an inch thick. Dust with flour throughout this process to keep the dough from sticking.

Step 7Cut the dough into thin strips.

Step 8Repeat with remaining dough.

Step 9Air dry for about 20 minutes.

Step 10At this point, you can either boil them in salted water for 5 minutes or until al dente, or lay them in a single layer on cookie sheets, and put them in the freezer. Once they are frozen, you can transfer them to a Ziploc freezer bag and keep them in your freezer for later use.
