Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg, whole
  • 2 large egg yolks
  • 1/3 cup water
  • 1 teaspoon vegetable oil

How To Make kim's egg noodles

  • Step 1
    In a big bowl, stir together the flour and the salt. Make a small hole in the middle and set aside.

    In a small bowl, mix the egg, egg yolks, water, and vegetable oil.
  • Step 3
    Pour the egg mixture into the hole you made in the flour. Stir to combine.
  • Step 4
    Knead the dough until smooth, about 10 minutes, on a flat and well-floured surface.

    Let the dough rest for 10 minutes.

    Divide the dough into four pieces. Using one piece at a time, roll the dough into a square approximately 1/8 of an inch thick. Dust with flour throughout this process to keep the dough from sticking.

    Cut the dough into thin strips.

    Repeat with remaining dough.

    Air dry for about 20 minutes.

    At this point, you can either boil them in salted water for 5 minutes or until al dente, or lay them in a single layer on cookie sheets, and put them in the freezer. Once they are frozen, you can transfer them to a Ziploc freezer bag and keep them in your freezer for later use.
