This is a delicious noodle bowl. This would be a great hangover dish for breakfast. Spicy, salty, sweet, sour, and umami.

Ingredients
- 4 slices bacon, cut into small pieces
- 4 ounces rice noodles, I used pad Thai noodles
- 1 cup Kimchi chopped
- 1 bunch green onions, chopped; white and light green parts only save the dark green for garnish
- SAUCE
- 1 teaspoon Korean chili flakes
- 1/2 tablespoon Gochujang
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon white sugar
- 1 tablespoon minced garlic
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 2 large eggs
- salt and pepper
How To Make kimchi noodle bowl

Step 1Mix the sauce ingredients and set aside.

Step 2Place a large wok over medium heat and cook the bacon until its crisp.

Step 3At the same time, cook the noodles according to the instructions.

Step 4Once the bacon is crisp, add the kimchi and the dark green and light green parts. Stir fry for 2 minutes.

Step 5Pour in the sauce and add the kimchi and noodles. Stir fry another 2 minutes.

Step 6Fry the eggs and season with salt and pepper.

Step 7Place the egg on top of the noodles and garnish with the dark green parts of the green onions.
