This is a delicious noodle bowl. This would be a great hangover dish for breakfast. Spicy, salty, sweet, sour, and umami.

Ingredients

  • 4 slices bacon, cut into small pieces
  • 4 ounces rice noodles, I used pad Thai noodles
  • 1 cup Kimchi chopped
  • 1 bunch green onions, chopped; white and light green parts only save the dark green for garnish
  • SAUCE
  • 1 teaspoon Korean chili flakes
  • 1/2 tablespoon Gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon white sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 large eggs
  • salt and pepper

How To Make kimchi noodle bowl

  • Step 1
    Mix the sauce ingredients and set aside.
  • Step 2
    Place a large wok over medium heat and cook the bacon until its crisp.
  • Step 3
    At the same time, cook the noodles according to the instructions.
  • Step 4
    Once the bacon is crisp, add the kimchi and the dark green and light green parts. Stir fry for 2 minutes.
  • Step 5
    Pour in the sauce and add the kimchi and noodles. Stir fry another 2 minutes.
  • Step 6
    Fry the eggs and season with salt and pepper.
  • Step 7
    Place the egg on top of the noodles and garnish with the dark green parts of the green onions.
