kickin spinach pepper spaghetti

Ingredients
- 1 pound thin spaghetti
- 2 jars your favorite spaghetti sauce
- 14 ounces andouille sausage, sliced
- 8 ounces baby bell mushrooms, quartered
- 8 ounces baby spinach
- 1 - red bell pepper, cut in matchsticks
- 1/4 cup red onion diced
- 1 - garlic clove, minced
- 1/2 cup grated parmesan
- - olive oil
- - salt and pepper, to taste
How To Make kickin spinach pepper spaghetti

Step 1Prepare spaghetti according to al dente directions. Drain and set aside. Preheat oven to 350.

Step 2Sauté mushrooms in oil, add peppers and onions. Cook until starting to soften, add garlic and sausage. Continue to stir and cook. Add spinach and stir to wilt the spinach. Lightly salt and pepper as you sauté.

Step 3Pour sauce into casserole dish, add pasta and toss. Add sautéed ingredients and toss to evenly coat everything. Top with Parmesan. Bake, uncovered, 20-30 minutes until cheese is melted and golden.
