Notes from the Test Kitchen:
I'm not sure there are many flavors that pair better than bacon and cheese. The more cheese (and bacon) the better and this recipe is packed with both! I love the variety of cheeses... makes for creamy mac and cheese. The bacon adds a bit of a salty, smoky flavor that compliments the cheesy goodness.

4 oz
Colby Jack cheese
4 oz
sharp cheddar
1/2 lb
mozzarella cheese
1/2 lb
Velvetta cheese
4 Tbsp
butter or margarine
5 slice
bacon; cooked until crisp
salt and pepper; to taste
1 1/2 c
milk, 2%
1 lb
box of pasta; cooked
1/2 c
bread crumbs

1Cut cheese into small cubes.
2Put all ingredients (except bacon and pasta) in large sauce pan. Cook over medium-high heat until cheese is melted.
3Add pasta and bacon to cheese mixture.
4Pour into a large casserole dish that has been prepared with vegetable spray. Sprinkle bread crumbs evenly over pasta.
5Bake for about 30 minutes or until bubbly. Let stand for about 10 minutes.
