jackie's cherry chicken poppyseed pasta salad

A bunch of us girls get together and do paper crafts once a month. Jackie made us this salad and since then more then half have remade it for one thing or another. It is scrumptious! Great for pot lucks, holiday parties or any other get together you can think of.

Ingredients
- 2 pounds chicken breast
- 1 box bow-tie pasta, cooked and drained
- 1 1/4 cups poppyseed dressing
- 1 1/4 cups mayonnaise
- 3/4 cup chopped celery
- 3/4 cup red onion
- 5 ounces dried cherries
- 1 cup slivered almonds
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper (or to taste)

Step 1Cut chicken into bite size chunks and cook/brown in skillet with EVOO or cooking spray. Cook pasta per package directions (don’t overcook), rinse with cold water, and drain well.

Step 2Mix Mayo, Poppyseed dressing, salt and pepper in a bowl and set aside.

Step 3Combine chicken, pasta, celery, onions, and cherries in a large bowl.

Step 4Fold 1 ¾ cup mayo, poppyseed, salt and Pepper mixture into salad. Reserve the remaining ¾ cup to add just before serving.

Step 5Cover and refrigerate salad & extra dressing for several hours or overnight.

Step 6Just before serving add additional dressing and slivered almonds. Mix Well. Enjoy.
