Ingredients

  • 2 tablespoons vegetable stock
  • 1 - red bell pepper, coarsely chopped
  • 1 - green bell pepper, coarsely chopped
  • 1 - yellow bell pepper, coarsley chopped
  • 2 small zucchinis, sliced
  • 1/2 - red onion, finely chopped
  • 1 - garlic clove, minced
  • 14 ounces tomatoes, canned whole and undrained
  • 4 large sundried tomatoes, softened and chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper

How To Make italian-style vegetables with pasta

  • Step 1
    Heat a large skillet.
  • Step 2
    Add the stock and all the ingredients except the pasta.
  • Step 3
    Cover and cook over medium-low heat for 15 to 20 minutes, or until al dente.
  • Step 4
    Cook the pasta according to the package directions.
  • Step 5
    Drain well and serve with the vegetable sauce.
