Ingredients
- 2 tablespoons vegetable stock
- 1 - red bell pepper, coarsely chopped
- 1 - green bell pepper, coarsely chopped
- 1 - yellow bell pepper, coarsley chopped
- 2 small zucchinis, sliced
- 1/2 - red onion, finely chopped
- 1 - garlic clove, minced
- 14 ounces tomatoes, canned whole and undrained
- 4 large sundried tomatoes, softened and chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper

Step 1Heat a large skillet.

Step 2Add the stock and all the ingredients except the pasta.

Step 3Cover and cook over medium-low heat for 15 to 20 minutes, or until al dente.
