Ingredients

  • 1 large pot roast
  • 3 or 4 tablespoons olive oil
  • 2 cans crushed tomatoes
  • 2 cans tomatoes,stewed or diced, with liquid
  • 1 can tomatoe paste
  • 4 or 5 cloves garlic minced
  • 1 tablespoon oregano, dried
  • 2 tablespoons basil, dried
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 or 2 tablespoons sugar
  • 3 cans water (use the tomatoe can)
  • 3 - bay leaves, dried
  • 1 large onion diced

How To Make italian pot roast

  • Step 1
    heat a large sauce pan, add oil , and brown pot roast on both sides.
  • Step 2
    add onion, garlic, oregano, basil, salt , pepper, sugar, bay leaves, add tomatoes and 3 cans of water. simmer for about 3 hours, stirring occasionally. ( I cover the pot )
  • Step 3
    in a bowl mix some of the sauce or some water with the paste till smooth, add to pot, and continue cooking and stirring for about another hour, until meat is very tender, and sauce has thickened.
  • Step 4
    taste sauce and adjust to taste( salt, pepper,sugar). If you add anything more cook another 5 to 10 minutes.
  • Step 5
    this is good with the meat shredded into the sauce and served over spaghetti. or for sandwiches on Italian or french bread,or even with mashed potatoes on the side, I like to serve it with stuffed shells and plenty of garlic bread or buttered bread.
