These meatballs are fabulous. The ricotta cheese adds flavor and keeps them from being dry, as well as acting as a binder along with the egg. I have been working on meatballs for years trying to get a good one and I read about adding the ricotta cheese - it really is fantastic. Serve with your favorite sauce and over pasta. Add a salad and some garlic bread and you have a GREAT spaghetti dinner!

ground beef
3 clove
1/4 c
ricotta cheese
1/2 c
italian flavored bread crumbs
1/4 c
parmesan or peccarino cheese
3 Tbsp
oregano or italian seasoning to taste. i usually add about 3 tablespoons.

How to Make Italian Meatballs


  • 1Grate garlic cloves
  • 2lightly beat the eggs until yolk and white are blended
  • 3Combine all ingredients and blend thoroughly, adding italian seasoning or oregano to taste.
  • 4Form the meatballs - should make about 20 meatballs, and fry in olive oil.
