These meatballs are fabulous. The ricotta cheese adds flavor and keeps them from being dry, as well as acting as a binder along with the egg. I have been working on meatballs for years trying to get a good one and I read about adding the ricotta cheese - it really is fantastic. Serve with your favorite sauce and over pasta. Add a salad and some garlic bread and you have a GREAT spaghetti dinner!

Ingredients
- 1 pound ground beef
- 2 - eggs
- 3 cloves garlic
- 1/4 cup ricotta cheese
- 1/2 cup italian flavored bread crumbs
- 1/4 cup parmesan or peccarino cheese
- 3 tablespoons oregano or italian seasoning to taste. i usually add about 3 tablespoons.
How To Make italian meatballs

Step 1Grate garlic cloves

Step 2lightly beat the eggs until yolk and white are blended

Step 3Combine all ingredients and blend thoroughly, adding italian seasoning or oregano to taste.

Step 4Form the meatballs - should make about 20 meatballs, and fry in olive oil.
