italian linguini aglio e olio with asparagus

I have taken months to try and perfect this. It does take a lot of time, but I can guarantee you will be astonished by the flavorings used to make the shrimp, asparagus, oil, and garlic shine! I actually drafted it several times until I was finally happy. I think u will be too. I originally had a similar dish at an authentic Italian place, but it took forever to get the same yumminess.

Ingredients

  • 5 medium fresh shrimp, cleaned, deveined, cut in 1/2, lengthwise
  • 1 pound fresh asparagus, tough ends cut off, then cut in 1/2.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly chopped italian parsley
  • 1/2 teaspoon red pepper flakes
  • 1 pinch sea salt
  • BREAD CRUMB TOPPING
  • 2 tablespoons olive oil
  • 1 pinch coarse sea salt
  • 1/2 cup Panko bread crumbs
  • 1 teaspoon chopped, fresh italian parsley
  • PASTA
  • 8 ounces linguini pasta
  • 2 tablespoons olive oil
  • 3 slices fresh garlic
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon freshly chopped italian parsley

How To Make italian linguini aglio e olio with asparagus

  • Step 1
    For the shrimp marinade, in a medium bowl, add shrimp, asparagus, oil, garlic, Italian parsley, red pepper flakes, and sea salt. Gently toss to combine, set aside.
  • Step 2
    For the bread crumbs, add oil, bread crumbs, and sea salt to a large skillet. Cook over medium-low until golden in color, constantly tossing to coat. Add parsley and cook, stirring for 30 seconds. Remove from heat and place in a separate bowl; keep warm.
  • Step 3
    For the pasta, start the pasta on a medium-low boil. Reserve 1/4 cup of pasta water, set aside. In the meantime, add the 2 Tbsp oil and thinly sliced garlic, along with red pepper flakes, in a large pan over medium heat. After a cook toss of ingredients in the pan. Place the heat on low to let the garlic sizzle but not turn brown.
  • Step 4
    To finish, add the bowl of the shrimp marinade, along with the reserved pasta water, and stir well.
  • Step 5
    Drain the remaining pasta and place it in a large serving bowl. Once the shrimp marinade is combined well, add it all to the pasta bowl.
  • Step 6
    Arrange the shrimp and asparagus the way you like, and then sprinkle the bread crumb mix evenly over all. Sprinkle the top with additional parsley if you like.
