  • 3 c
    fresh basil leaves
  • 3 Tbsp
    pine nuts
  • 6 clove
  • 8
    pitted kalamatta olives
  • 1 c
    grated parmesan cheese
  • 1 c
    olive oil
  • ·
    salt and pepper

  • 1 lb
    angel hair pasta
  • 4
    boneless skinless chicken thighs cut into strips
  • 2 Tbsp
    olive oil
  • 1 c
    favorite spaghetti sauce
  • 1 c
    homemade pesto sauce
  • 8 oz
    roll of mozzarella cheese sliced into rounds

How to Make Italian Chicken Pesto Pasta


  1. For the pesto combine all ingredients except Olive oil in a food processor. Process drizzling the olive oil through the shoot until the pesto is well combined. Set aside.
  2. cook the pasta according to package directions and drain.
  3. Place the olive oil in a cast iron skillet or oven safe skillet. Sprinkle the chicken with salt and pepper then cook in oil until almost done. Pour in the spaghetti sauce and pesto. Add the pasta and stir until well combined.
  4. Set broiler on high. Add the mozzarella cheese around to top of pasta and place under broiler until cheese is browned and bubbly.
  5. Serve immediately
