Taking an idea from Reethy Daniels, I expanded the recipe to feed my family and guests...Thank you for the idea Ree...You are my inspiration!

Ingredients

  • 1 package johnsonville irish o'garlic sausage,casing removed
  • 1 bunch green onion, some tops too,diced
  • 3 stalks celery, diced
  • 1/2 medium each of a yellow and orange bell peppers, diced
  • 1 small each, a zucchini and a summer squash, diced
  • 1 teaspoon each of garlic powder, seasoned salt and pepper
  • 14 ounces can petite cut tomatoes and juice
  • 1 pound box bow tie pasta, cooked al dente, drained
  • 1/4 cup butter or margarine
  • 2 tablespoons seasoned bread crumbs
  • garnish: - fresh shredded parmesan cheese

How To Make irish sausage and veggies

  • Step 1
    Cook pasta al dente, rinse and drain and place back in kettle to dry up any remaining water..then add the butter and the bread crumbs to the pasta stirring to coat pasta..cover to keep warm.
  • Step 2
    In a dry pan place the sausage and scramble to brown with the celery, peppers,onions and squash. Sprinkle seasonings over all and add the tomatoes with juice; stir to combine.
  • Step 3
    Cover and let steam for 5 minutes. Uncover and let some moisture evaporate;about 1 minute. Serve over pasta, sprinkle parmesan over each serving.
