instant pot creamy smoked sausage mac & cheese
A cold Fall night, my husband and I wanted some creamy comfort food. One of our favorites, that's also quick to put together using our Instant Pot, is Mac & Cheese. Though I never make just plain Mac & Cheese, this recipe is very versatile on additions. I had smoked sausage available, but I've also used 2 lbs. browned ground beef or even 2 cans of tuna. I also like to add a vegetable. Green peas were in my freezer, but I've also used frozen broccoli. Go wherever your taste buds take you.

Ingredients
- 2 tablespoons olive oil
- 2 12 oz. packages beef smoked sausage
- 4 8 oz. cups beef broth
- 1 1/2 tablespoons mccormick pinch of garlic and herb
- 1 16 oz. boxes pasta shells
- 2 10.5 oz. cans cream of chicken soup
- 2 8 oz. cups water
- 1 12 oz. cans evaporated milk
- 4 ounces cubed velveeta cheese
- 1 8 oz. cups shredded cheddar/jack cheese
- 1 10 oz. bags frozen peas
How To Make instant pot creamy smoked sausage mac & cheese

Step 1Cut up smoked sausage into 1/4 inch slices, then cut them in half.

Step 2Pre heat a large skillet, I used my 12 inch cast iron pan. When pan is warm add the olive oil.

Step 3Lightly brown the sausage and then place in a paper towel lined bowl.

Step 4Using an 8 quart Instant Pot, add the brownd smoked sausage.

Step 5Next add the beef broth. I usually make mine using beef bouillon. Also add the 2 cups of water and the garlic seasoning. Give it all a stir.

Step 6Next add the shell pasta. Do not stir. Make sure the pasta is below the liquid.

Step 7Now add the two cans of cream of chicken soup on top of the pasta. Do not stir.

Step 8Place the lid of the Instant Pot on top, lock it in place and make sure everything is closed.

Step 9Set the manual cook time for 8 minutes. It usually takes 10 to 15 minutes to come up to pressure.

Step 10I like to steam my peas now in the microwave. I set it for 5 minutes on high.

Step 11While the peas are steaming, now is the time to open the evaporated milk, cube the Velveeta and have the shredded cheese ready.

Step 12After the cook time is done allow it to naturally release for 10 minutes. When done open the release valve and let it fully release till all the steam is out.

Step 13Carefully remove the top and place aside. Stir the pasta mixture. Immediately add the evaporated milk, the cubed Velveeta, shredded cheese, and the steamed peas. Stir it all into the pasta mixture.

Step 14Put the lid back on and close the release valve. This will allow the cheeses to melt. After 5 minutes remove the lid and give it a good stir.

Step 15Serve with warm garlic bread and/ or a simple salad. Enjoy!
