This is my mother-in-law's recipe. Everytime we have company she is requested to make this.

Ingredients

  • 1 (10oz) pkg
    frozen spinach, chopped
  • 1 Tbsp
    extra virgin olive oil
  • 2 lb
    ground chuck
  • 1 medium
    onion, chopped
  • 1
    garlic clove, minced
  • 1 lb
    can spaghetti sauce with mushrooms
  • 1 (8oz) can(s)
    tomato sauce
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 8 or 10 oz pkg
    shell or elbow macaroni, cooked
  • 2 c
    sharp cheddar cheese, shredded
  • 2
    eggs, well beaten
  • 1/4 c
    extra virgin olive oil
  • 1 (6oz) can(s)
    tomato paste

How to Make Inside Out Ravioli

Step-by-Step

  1. Cook spinach according to package directions - drain, reserving liquid. Add water to make 1 cup liquid. Set aside.
  2. Brown meat, onion and garlic in 1 Tbls oil.
  3. Stir spinach liquid, spaghetti sauce, tomato sauce, tomato paste, salt and pepper into meat mixture and simmer 10 minutes.
  4. Combine spinach, cooked macaroni, cheese, eggs, and 1/4 c oil.
  5. Spray a 9x13 baking dish with non-stick spray and spread the spinach mixture on the bottom. Spread the meat mixture on top. Bake at 350 degrees for 30 minutes. Let stand for 15 minutes.
