This is my mother-in-law's recipe. Everytime we have company she is requested to make this.

Ingredients

  • 1 (10oz) package frozen spinach, chopped
  • 1 tablespoon extra virgin olive oil
  • 2 pounds ground chuck
  • 1 medium onion, chopped
  • 1 - garlic clove, minced
  • 1 pound can spaghetti sauce with mushrooms
  • 1 (8oz) can tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 or 10 oz packages shell or elbow macaroni, cooked
  • 2 cups sharp cheddar cheese, shredded
  • 2 - eggs, well beaten
  • 1/4 cup extra virgin olive oil
  • 1 (6oz) can tomato paste

How To Make inside out ravioli

  • Step 1
    Cook spinach according to package directions - drain, reserving liquid. Add water to make 1 cup liquid. Set aside.
  • Step 2
    Brown meat, onion and garlic in 1 Tbls oil.
  • Step 3
    Stir spinach liquid, spaghetti sauce, tomato sauce, tomato paste, salt and pepper into meat mixture and simmer 10 minutes.
  • Step 4
    Combine spinach, cooked macaroni, cheese, eggs, and 1/4 c oil.
  • Step 5
    Spray a 9x13 baking dish with non-stick spray and spread the spinach mixture on the bottom. Spread the meat mixture on top. Bake at 350 degrees for 30 minutes. Let stand for 15 minutes.
