Ground Beef & Orzo Soup
1 1/2 lblean ground beef
1medium onion, chopped
4 clovegarlic, minced
1 can(s)(28 oz.) tomatoes, undrained
8beef bouillon, cubes
1/2 corzo pasta, uncooked
2 cfrozen peas & carrot mix
1 can(s)corn, drained
How to Make Ground Beef & Orzo Soup
- Cook beef, onion, and garlic in large saucepan over medium-high heat until beef is brown, stirring to separate meat; Drain fat.
- Puree' tomatoes with juice in covered blender or food processor. Add tomatoes, water, bouillon cubes and pepper to meat mixture. Bring to a boil; reduce heat to low. Simmer uncovered 20 minutes.
- Add orzo and vegetables, simmer 15 minutes more. Serve with crusty bread.
