I love ramen. Maruchan is my fav brand. I wanted to add vegetables to make it a little healthier. This green ramen turned out great. The frozen vegetables were very handy and made this cook up quickly.

Ingredients
- 1 package ramen, chicken flavor
- 3 tablespoons olive oil, extra virgin
- 4 ounces edamame, frozen
- 1/2 cup kale, frozen
- 1/2 cup yellow squash, frozen
- 1/2 cup zucchini, frozen
- 1/2 cup onion, diced
- 1/2 cup celery, frozen
- 1 tablespoon jalapeno peppers, jarred
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 4 ounces guacamole
How To Make green ramen

Step 1Make the ramen according to package directions and set aside.

Step 2Add the oil to a large skillet over med high heat.

Step 3Add the edamame, kale squash, zucchini, onion, celery and jalapenos. I used frozen vegetables (except for the raw onion and the jarred jalapenos) because I had them in my freezer. You can use fresh if you want but it will take longer to cook each vegetable.

Step 4Add the black pepper and the paprika.

Step 5Stir the vegetables until they thaw and the onion is soft but not browning.

Step 6Once the onion is soft pour the liquid from the cooked ramen into the skillet with the vegetables. Stir it in.

Step 7Turn off heat. Remove skillet from stove eye.

Step 8Stir in the guacamole.

Step 9Stir in the cooked ramen.

Step 10Serve warm.
