gourmet skillet lasagna
Very easy and creamy tasting lasagna. You do need a big pan though. Next time I will use a large Dutch oven. This made a lot.

Ingredients
- 2 tablespoons olive oil
- 1 pound sweet italian sausage casing removed
- 1 medium onion diced
- 6 cloves garlic minced
- 1/4 cup sweet italian vermouth
- 1 teaspoon dried oregano
- 2 - 28 oz cans san marzano crushed tomatoes
- - salt and pepper
- 2 tablespoons sugar
- 9 ounces pkg. no boil lasagna noodles
- 8 ounces mascarpone cheese
- 8 ounces fresh mozzarella cheese cut into small cubes
- 1 tablespoon dried basil or use fresh
How To Make gourmet skillet lasagna

Step 1In a large high sided skillet heat the oil. Add the sausage, onion, and garlic. Cook until meat is no longer pink. Remove with slotted spoon and set aside. Deglaze the pan with the sweet vermouth and let most evaporate.

Step 2Add the tomatoes, oregano, and sugar. Season with salt and pepper to taste. Break up the lasagna noodles and place them down into the sauce. Cover the pan and simmer for about 12 to 15 minutes until noodles are tender. Spoon the mascarpone cheese onto the top of the lasagna. Cover the pan and let the cheese melt. Stir it into the sauce.

Step 3Add the sausage mixture back to the sauce. Stir to incorporate it into the sauce. Top with the cubes of Mozzarella cheese. Cover and let cheese melt. Top with basil and serve.
