Gourmet Skillet Lasagna

Very easy and creamy tasting lasagna. You do need a big pan though. Next time I will use a large Dutch oven. This made a lot.

  • 2 Tbsp
    olive oil
  • 1 lb
    sweet italian sausage casing removed
  • 1 medium
    onion diced
  • 6 clove
    garlic minced
  • 1/4 c
    sweet italian vermouth
  • 1 tsp
    dried oregano
  • 2
    28 oz cans san marzano crushed tomatoes
  • ·
    salt and pepper
  • 2 Tbsp
  • 9 oz
    pkg. no boil lasagna noodles
  • 8 oz
    mascarpone cheese
  • 8 oz
    fresh mozzarella cheese cut into small cubes
  • 1 Tbsp
    dried basil or use fresh

How to Make Gourmet Skillet Lasagna


  1. In a large high sided skillet heat the oil. Add the sausage, onion, and garlic. Cook until meat is no longer pink. Remove with slotted spoon and set aside. Deglaze the pan with the sweet vermouth and let most evaporate.
  2. Add the tomatoes, oregano, and sugar. Season with salt and pepper to taste. Break up the lasagna noodles and place them down into the sauce. Cover the pan and simmer for about 12 to 15 minutes until noodles are tender. Spoon the mascarpone cheese onto the top of the lasagna. Cover the pan and let the cheese melt. Stir it into the sauce.
  3. Add the sausage mixture back to the sauce. Stir to incorporate it into the sauce. Top with the cubes of Mozzarella cheese. Cover and let cheese melt. Top with basil and serve.
