gnocchi with sausage and white beans
In recent months, I have absolutely fallen in love with frozen gnocchi. It's so easy and delicious! I'm always looking for new ways to make it. This one is absolutely delicious, and it goes from prep to table in 30 minutes!

Ingredients
- 1 pound smoked sausage, brand and variety of your choice, (i use eckrich turkey smoked sausage to cut down on fat)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 can (15 oz.) italian style diced tomatoes
- 1 can (15 oz.) cannellini beans, rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups fresh spinach, chopped
- - salt & pepper to taste
- 1 cup mozzarella cheese
- 3 tablespoons fresh chopped parsley
- 1/4 cup fresh parmesan cheese
How To Make gnocchi with sausage and white beans

Step 1Cook gnocchi according to package directions and set aside.

Step 2Heat oil in a large, deep skillet. Add sausage and onion; brown for 5 minutes.

Step 3Add garlic and saute for 30 seconds longer.

Step 4Add tomatoes and basil, oregano, spinach, beans and gnocci and stir over medium heat until heated through, the flavors are blended and spinach is wilted.

Step 5Sprinkle with shredded mozzarella. turn down the heat and cover until cheese melts.

Step 6Serve on plates or in pasta bowls with crusty bread. Garnish with chopped fresh parsley and shaved or shredded parmesan.
