Ingredients
- 2 ounces parmesan cheese shredded
- 4 ounces manchego cheese shredced
- 1/4 cup pine nuts
- salt
- 2 cloves garlic minced
- 4 cups basil leaves
- olive oil
- 2 pounds gnocchi handmade or store bought
How To Make gnocchi with basil manchego pesto

Step 1Place all ingredients except oil in a food processor. process drizzling in the olive oil creating a pesto.

Step 2Cook the gnocchi according to package directions. Reserve about 1/4 cup gnocchi water Drain the gnocchi. Add the pesto with a little of the water and enjoy
