This is super yummy. I make my own gnocchi it's the best.

Ingredients

  • 2 ounces parmesan cheese shredded
  • 4 ounces manchego cheese shredced
  • 1/4 cup pine nuts
  • salt
  • 2 cloves garlic minced
  • 4 cups basil leaves
  • olive oil
  • 2 pounds gnocchi handmade or store bought

How To Make gnocchi with basil manchego pesto

  • Step 1
    Place all ingredients except oil in a food processor. process drizzling in the olive oil creating a pesto.
  • Step 2
    Cook the gnocchi according to package directions. Reserve about 1/4 cup gnocchi water Drain the gnocchi. Add the pesto with a little of the water and enjoy
