I did not want to go to the store today but I wanted pasta for lunch. I decided to make a pasta dish with what I had at home. I picked some tomatoes from my garden this morning and I have a lot of basil.So,that was a great start. I wanted a simple, but tasty dish so I checked the refrigerator and pantry to come up with the rest of the ingredients, this is what I came up with and I was very happy with the results. I didn't measure anything,I was looking for a flavorful dish and seasoned accordingly.Heavy on the garlic, hint of anchovy and lot's of basil & cheese.

Ingredients

  • - pasta,any kind
  • - ripen tomatoes,preferbly garden fresh
  • - olive oil
  • - onions, sliced thin
  • - capers, drained
  • - fresh garlic, sliced
  • - anchovies
  • - crushed red chili flakes
  • - oregano, dried
  • - salt & pepper, to taste
  • - fresh basil
  • - parmesan cheese, freshly grated

How To Make garden pasta

  • Step 1
    Bring a pot of water to boil.Add salt.Add tomatoes, cook 1 min.remove from pot,drain & set aside.
  • Step 2
    Add pasta and cook just until tender.
  • Step 3
    When pasta is almost done,heat oil in a skillet, add onions,saute until slightly soft, add garlic, anchovy,tomatoes and seasonings except basil.Cook until tomatoes break apart and juicy.
  • Step 4
    When pasta is done, add to skillet and mix well.Add a bit of pasta water if needed so dish is not dry.Combine well.Remove form heat
  • Step 5
    Tear basil into small pieces and sprinkle over dish.Taste for seasoning.Sprinkle with Parmesan cheese.
