Mmmmmmmm! A perfect use for leftover spaghetti or any pasta! I got this from an old Italian friend. She says, "You haven't had spaghetti until you have had fried spaghetti!" I totally forgot about this recipe!

Ingredients

  • 8 ounces leftover spaghetti pasta (cooked & cooled overnight)
  • 3 x large eggs
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon basil, dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley flakes
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil, extra virgin
  • GARNISH:
  • - parmesan cheese

How To Make fried spaghetti

  • Step 1
    THE DAY BEFORE: Cook spaghetti according to package directions. Drain & place in a large bowl. Refrigerate overnight.
  • Step 2
    In a medium bowl, whisk together the eggs, cheeses, basil, salt, onion & garlic powders, parsley & pepper. Pour the mixture over the spaghetti & toss to coat well.
  • Step 3
    In a large skillet, add olive oil & butter over medium heat. Mix the two around to cover the skillet surface.
  • Step 4
    Add the tossed spaghetti to the skillet & spread across the surface. Do not stir the spaghetti once it covers the surface of the pan, but let it fry on the bottom & heat through. Cook for 10 minutes over medium heat, until the bottom of the spaghetti is a golden brown, about 5 - 10 minutes (just keep checking.
  • Step 5
    Turn the skillet out onto a serving plate and cut into wedges.
  • Step 6
    Top with additional parmesan cheese, if desired. And serve with Italian Sausage on the side.
