It's fun to make fresh pasta, and this sauce is awesome.

Ingredients

  • PASTA
  • 3 cups all-purpose flour, plus more for dusting
  • 4 large eggs
  • 1 large egg yolk
  • 1/4 cup olive oil
  • SAUCE
  • 1 pound ricotta cheese
  • 1 - lemon, zested
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 cup pasta water
  • 1 cup fresh basil, chiffonade
  • fresh Parmesan, for serving

How To Make fresh pasta with lemon, ricotta, and basil

  • Step 1
    Flour your workspace. Place the flour on the workspace. Make a well in the middle and add the eggs and oil. Whisk the eggs and oil into the flour. Add some water if too dry.
  • Step 2
    Once the mixture is well incorporated, start kneading the dough. Keep kneading and folding the dough in on itself for 8 to 15 minutes.
  • Step 3
    Roll into a ball and wrap in plastic, then let rest 30 minutes.
  • Step 4
    After resting, cut about a quarter of the dough and run it through the pasta maker on the number 1 setting.
  • Step 5
    Run it through, then fold it in half and run it through, dusting with flour, do this about 5 times. Select setting number 2 and do it again. Continue to 5 or 6, depending on what kind of noodles you are making.
  • Step 6
    Once you get to the desired thickness, do this with the rest of the dough. Roll the dough through the desired cutting part and place it on a lightly floured surface.
  • Step 7
    Bring a large pot of water to a boil and add plenty of salt to make it taste like the ocean. Place the dough into the boiling water and swirl it around a bit, and cook for about 3 to 5 minutes, again depending on the size of the pasta.
  • Step 8
    Drain, reserving 1/2 cup of the pasta water. Place the pasta back in the pan.
  • Step 9
    For the sauce, mix the ricotta, zest and juice of lemon, and basil. Season with salt and pepper.
  • Step 10
    Mix the sauce with the pasta and some pasta water to make the right consistency. Serve with fresh grated Parmesan.
