We recently learned that my husband is diabetic and cooking for him was something I had to learn. He loves to eat so I needed something that was not only healthy and would not spike his blood sugar but also be tasty and filling....

Ingredients

  • 1 - a batch of whole wheat lasagna noodles (recipe follows)
  • 1 - small yellow squash diced
  • 1 - small zucchini diced
  • 1 - small green peper diced
  • 1 - baby portebello mushrooms halved
  • 3 - cloves of garlic minched
  • 4 - on the vine tomatos diced
  • 1 cup tomato paste, no salt added
  • 1 can diced tomatoes, no salt added
  • 2 tablespoons mrs. dash
  • 3 packages splenda
  • 2 tablespoons italian seasoning
  • 2 tablespoons olive oil, extra virgin
  • 3 cups cheese of choice |(low fat)
  • WHOLE WHEAT LASAGNA NOODLES
  • 1 - well beaten egg
  • 1/2 teaspoon mrs dash
  • 3 tablespoons skim milk
  • 1 cup whole wheat flour

How To Make for the love of my husband lasagna

  • Step 1
    PREPARE PASTA In a pot add all vegatables, oil and seasonings and simmer for 30 minutes. layer the bottom of a 9 by 13 glass pyrex dish with noodle then add sauce and cheese repeat layers top lasagna with with remaining cheese and back in a pre heated oven of 350 for 50 minutes....

    ( DIRECTION FOR WHOLE GRAIN PASTA ) Mix all the ingredients together to make a stiff dough. Roll very thin on a floured surface: let stand 20 minutes. Roll loosely: slice 1/4 inch wide : unroll : spread out and let dry 2 hours. (if disired, store in a container until needed) Drop into boiling soup or boiling, salted water and cook uncover about 10 minutes..
