This recipe comes from one of my favorite restaurants in Orlando, Christini's. The owner gave me the recipe years ago. I have since added a few ingredients which will be listed as an option. Enjoy

Ingredients

  • 16 oz - fresh fettucini pasta
  • 8 oz - smoked salmon, cut into small pieces
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 3 - egg yolks, beaten
  • 1 cup fresh grated parmesan cheese
  • 2 - garlic cloves, minced (optional)
  • 1 ounce vodka
  • 1 tablespoon black caviar to sprinkle on completed dish (optional)

How To Make fettucini alla rimini (pasta with salmon)

  • Step 1
    Cook fettucini ala dente, drain and keep warm
  • Step 2
    Over medium heat, saute salmon in the butter. Add vodka and flambe. Stir in the heavy cream and garlic, reduce heat to thicken. Add egg yolks, blending well. Remove from the heat and stir in cheese.
  • Step 3
    Toss the fettucini in the sauce. Garnish with caviar. You are going to love this!!!!!
