Fettucine Asparagus with Shiitake & Smoked Bacon

6 oz
bacon, smoked and cut into 1/2" dice
4 Tbsp
olive oil
6 oz
shiitake mushrooms, sliced
1 lb
asparagus, cut in 2" pieces
12 oz
fettucine, fresh
1 Tbsp
thyme, fresh chopped
2 Tbsp
oregano, fresh chopped
"just a pinch" of salt
"just a pinch" of pepper


1Saute bacon in skillet until crisp, remove to a plate. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened.
2Lightly blanch the asparagus.
3Cook the pasta briefly in boiling salted water. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper.
