fettucine asparagus with shiitake & smoked bacon

Ingredients

  • 6 ounces bacon, smoked and cut into 1/2" dice
  • 4 tablespoons olive oil
  • 6 ounces shiitake mushrooms, sliced
  • 1 pound asparagus, cut in 2" pieces
  • 12 ounces fettucine, fresh
  • 1 tablespoon thyme, fresh chopped
  • 2 tablespoons oregano, fresh chopped
  • - "just a pinch" of salt
  • - "just a pinch" of pepper

How To Make fettucine asparagus with shiitake & smoked bacon

  • Step 1
    Saute bacon in skillet until crisp, remove to a plate. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened.
  • Step 2
    Lightly blanch the asparagus.
  • Step 3
    Cook the pasta briefly in boiling salted water. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper.
