Ingredients
- 6 ounces bacon, smoked and cut into 1/2" dice
- 4 tablespoons olive oil
- 6 ounces shiitake mushrooms, sliced
- 1 pound asparagus, cut in 2" pieces
- 12 ounces fettucine, fresh
- 1 tablespoon thyme, fresh chopped
- 2 tablespoons oregano, fresh chopped
- - "just a pinch" of salt
- - "just a pinch" of pepper
How To Make fettucine asparagus with shiitake & smoked bacon

Step 1Saute bacon in skillet until crisp, remove to a plate. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened.

Step 2Lightly blanch the asparagus.

Step 3Cook the pasta briefly in boiling salted water. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper.
