Ingredients
- 1 pound zucchini
- 2 - red peppers
- 1/2 cup olive oil
- 2 - chopped onions
- 2 - minced garlic cloves
- 16 ounces tomatoes
- 1 teaspoon salt
- 1/8 teaspoon red pepper flakes
- 1 pound fettuccine pasta
How To Make fettuccine with zucchini

Step 1Trim the ends of the zucchini and slice into long julienne strips.

Step 2Cut the peppers into strips.

Step 3Heat the olive oil in a large skillet and saute the onions, garlic, zucchini, and peppers for 5 minutes.

Step 4Add the tomatoes, salt, and red pepper flakes and cook over low heat for another 5-10 minutes.

Step 5Serve over cooked fettucine.
